Tatemo originally began as a food concept that was going to focus on maíz and really highlighting that through the dishes, but due to the pandemic they quickly switched and became a tortilleria and molineria and have found tremendous success through these ventures.
One of the big things that is important to Tatemo is focusing on the quality of the maíz and doing everything from scratch so that the product that is produced is one that really lets the complexity and flavors shine through. They also want to restore the cultural value of maíz as well as how much value it can bring to you nutritionally by showcasing the diversity of the heirloom corn that they use. The technique that they use to prepare their corn is one that really represents Mexican culture and its traditional cuisine and that was something very important to Tatemo’s mission.
